Academy of Cheese ‘Great British Cheese Masterclass’ tasting features Colston Bassett…
This month we were delighted to join The Academy of Cheese and The Fine Cheese Co. in London’s Soho Square for a fantastic morning of blind cheese tasting at their British Cheese Masterclass.
Hosted by Ruth Ruskin, Head of Cheese at The Fine Cheese Co., alongside Matthew Luke from The Academy of Cheese, the session featured five carefully curated cheese flights, each showcasing the remarkable diversity of British cheesemaking.
The course traced the rich history of British cheese from the Domesday Book through the centuries, covering the decline and subsequent cheese renaissance that has led to today’s vibrant artisan scene. Along the way, we explored the craft, traditions, and innovation behind modern farmhouse production while sampling some exceptional examples.
Highlights included a brand-new cheese from the Adur Valley, crafted by Matt Gue on his Sussex farm - definitely one to watch. The tasting also featured renowned classics, including our very Colston Bassett Stilton, that was one of the blue cheeses selected by The Fine Cheese Co. for the blind tasting. They noted that it “continues to delight with its smooth creamy taste & complex mellow flavours and is a watchword for consistency”.
It was an inspiring and delicious morning celebrating the heritage, skill, and exciting future of British cheese that we were delighted to be part of.
